What signs do you find the most and least prone to be very involved in one of the major organized religions?

Most spiritual (b/c they have complex minds & actually like dwelving into subjects/topics that are "deep" & complex---anything that's NOT simple): Aquarius, Scorpio, Virgo, Cancer
Lease spiritual (b/c of their short attention spans & admiration for things that are simple and/or black & white... These people can barely last/sit through a 2 hour church service) : Leo, Sagg, Gemini, Aries & Pisces
Caps, Libra & Taurus are sort of in the middle. They only get "deep" when they're in the mood. It's not an all-the-time thing for them.

There's only a few people I know who have been zealous about their belief to the point of it standing out, and only a few who vehemently refuse to accept religious faith.

I don't know the signs of the most religious people I know. I work with them and they're all from Ethiopia. That's all I know. No friend, or acquaintance, I know is religious at all. My ex's mom is pretty Catholic and she's an Aqua.
I'd say the least religious, as in atheist and outright anti-religious, are a Cap, my ex Libra, a Cancer, a few Virgos, and a couple of Taureans. Other than that most people I know are agnostic.

Interesting that you claim people who can barely last through a church service to be "simple" people who can only see in black and white. If anything, organized religion is tailor-made for simpletons who can't think beyond "us vs. them" and need strength in numbers to justify their beliefs. I also don't know where you're getting that Pisces are simple and not spiritual when almost everything I've read (correctly, IMO) states that we're very complex and deeply spiritual. If anything, that's the real reason you haven't been running into too many fish at the church house... most Pisces I know have questions about the universe that are far too complex for the answers organized religion could provide us.
I would also disagree that Virgos are likely to delve into organized religion. The sheer lack of logic and contempt for anything beyond "have faith!!!" would be a huge turn-off for them.

And that came from a person who claims that everything she writes about in here comes from her own observations, having interviewed thousands of people .... so, how could she be so wrong?
Pisces only in black and white? That would mean we cannot lie because everything would have to be clear-cut, do deceptive shades of gray.

Whimsy, I don't think this can be categorized according to astrology ....
Perhaps, it has more to do with how a person is raised .... if a person is coddled and never held accountible for thier actions, then they probably grow up thinking that some other force is the one responsible for life itself ....... whereas a person who is raised having to tote the line for their own life, even as a child, would probably grow up more inclined to "think" about what is right, rather than taking blind leaps of faith.

my first bf who was a virgo even told me... "you're either happy or your sad; there's no such thing as a middle."

and to add to the controversy, my mother's adoptive son is a pisces and grew up to be an orthodox preacher.

I do agree with your categorizations on the behavioral terms of the signs though. whether that really applies to spirituality, I cannot say.

LOL, maybe because I haven't heard from this girl since January. I honestly don't care to speak to her or miss her, she drains me.
I would say Cancer may be the sign most involved in mainstream/conventional religion because of the need to belong, to find "safety in numbers", and perhaps to find some kind of reassurance or peace of mind regarding the afterlife. Most religions are pretty big on "family values" as well. My mother was a Cancer and a regular churchgoer. Perhaps Aquarius might be the most "atheistic" sign.
