Another thing I should probably add is because I suffer from anxiety symptoms and hypochondria, my worry often makes it feel like the insides of my mouth are swollen when they probably are not as I had this checked out.. I don't know if anxiety and me not being in the best mental state is also contributing to it not going down also. even though this could be simple it is only natural for me to assume the worst :/ like I had previously suspected I'm in the early stages of salivary gland cancer or something

Its most likely the anxiety causing physical symptoms . If youre really concerned..go to the doc and have your throat checked out...it will also ease the anxiety about it...but make sure you get treatment for your anxiety and ban yourself from reading diseases and crap on the internet...it will only make it worse.

Good lord, go to the doc. Quit asking this place for medical advice. :/
I am going to the doctor.. But the thing is I live in the UK where healthcare is free for all so service isnt particularly good and they dont do much.. I have to wait weeks for an appointment at times and in terms of symptoms things could get a lot worse within that time.. Also yes I hope it is anxiety, I dont really think I need medication for it though as its still there but gradually going.. Its a lot better than it initally was

At least your healthcare is free and you can go get it checked out. Healthcare isn't as easily accessible in other places.
Quit whining and drop the paranoia. You'll be fine until your appointment.
