How does the Virgo moon effect the sun sign

Especially fire suns?
I know a Sag with a Virgo moon. He seems very down to earth and grounded on the surface.
But then after one day of happy feeling the next day he starts acting bat shit crazy.

My Virgo moon helps tone down my "I am holier than thou" attitude.. I think I'm greater at certain things but I don't say anything in fear of being judged.
I'm a Sag with Virgo moon and it makes me very unemotional and distant and I have a fear of putting myself out there and being let down, it makes me very grounded as well and not all over the place, but it really hurts my relationships, I have to he with someone who brings the softer side out of me

He has been having a difficult time with family, work etc. He's not on speaking terms with his mother and was having a hard time with his father.
But I was so drawn toward that affectionate warm and down to earth side. It was like Jekyll and Hyde really. We would have a great conversation; 2 minutes after we hung up the phone he would call me back and pick a fight. The last straw was when I couldn't return his call/text because I was driving. When I got home he left me the most insulting message. Calling me names, the next day he was friendly.

But why?
How old is he? I don't pick fights at all, I hate drama now that im 31but when I was younger I kinda initiated it. Never a Jekyll and Hyde it was more like if the actions weren't reciprocated I took it personal now I just become distant. It's really easy for me to cut people out of my life. I'm in the same situation with my parents but now just distant myself bc I don't like the drama. Are you sure it's Virgo moon?

I'm afraid that's Sag sun not Virgo moon. My friend is Sag Sun/Taurus moon and she does the same to her boyfriend.
But why?
It keeps things interesting for her I guess. Or sometimes she will overanalze something he said and then call back and cuss him out for a perceived slight. And she admitted that she likes to mess with him sometimes and get him riled up. He's a virgo though and stays calm which drives her crazy. She leaves me messages too when I miss her calls, but its more sarcastic jokey. Like she told me I wasn't worth two nickels rubbed togetherclick to expand
Yup that's him. You can almost hear the clicking and clanging of his mind mulling over what had traspired between us by the next call.
I'm a Sag sun/ Virgo moon; and I do feel like I have spilt personalities. I always say I'm full of contradictions. The Virgo moon also makes me over analyze everything in a relationship, especially what a person says. I begin to break things down picking at every little detail. It's like I'm always at odds with in myself. Some days I'm fun loving and just chill. Then some days the smallest things will make me blow up. I have days where I don't want to be bothered at all. If I'm on my little bubble and you call me; more then once I get very irritated. I have so may facets that at times no one knows how I'm going to react at certain days. My family now gets that when I'm in my bubble not to mess with me because it's my time of space.
Beyond that I'm laid back...lol. Now for some reason thanks to a Cancer sun with a Leo moon; I'm learning how to become more grounded; as well as stop analyzing every detail when I have a falling out with someone.
In some ways it helps because Virgo moon; kind of stops my natural trait of impulsiveness slow it down. I think more from logic and rational then just diving in head first in to things. Don't get me wrong I'm a quantum Leaper, but I know when to do it and when not to.
But like I said I'm very at odds with myself. I think my other placements have a lot to do with it as well since I have all four elements in my birth chart.
