a very meager sum. Also, by enjoying a variety of foods, all foods tastes great. Especially,
when you are hungry.

I love me some fish and chips... but I'm afraid it is an excuse to indulge in the lemon, vinegar and tartar sauce.

Louisiana Tartar Sauce
PREP TIME: 15 Minutes
MAKES: 2 Cups


COMMENT:
Tartar sauce is normally served with all fried seafood dishes in South Louisiana. You may wish to try this sauce as a dip for catfish beignets or as a topping for a seafood terrine.
INGREDIENTS:
1 1/2 cups heavy duty mayonnaise
2 tbsps lemon juice
1/4 cup pimento olives, chopped
1/4 cup sweet pickles, chopped
1 tbsp sweet pickle juice
1 cup capers, chopped
1/4 cup parsley, chopped
1 tbsp green onions, sliced
salt and black pepper to taste
Louisiana Gold Pepper Sauce to taste
METHOScared
In a large ceramic bowl, combine mayonnaise and lemon juice. Using a wire whisk, blend until well incorporated. Add olives, pickles, pickle juice, capers, parsley and green onions. Fold all seasoning ingredients into the mayonnaise until mixture is evenly blended. Season to taste using salt and Louisiana Gold. If you prefer a more tart taste, add extra lemon juice or white vinegar. If a sweeter taste is preferred, add more sweet pickle juice or a touch of sugar. Cover with clear wrap and refrigerate overnight for flavors to develop.

If you didn't know, some malt vinegar does wonders on that dish! Yummy!


For those you who don't know, you can get yourself a nice manual french fry cutter on ebay.
I have a Volrath brand cutter and it does a nice job of making home-made fries. it's a professional
grade cutter and would make fries like those in the pic. smile
On the flipside of the highway, I also love steak fries, which are large fries, dipped in ketchup.
These are excellent with the standard truck stop or cafe cheeseburger with lettuce, tomato and onion on a lightly toasted sesame seed bun. Variations of the burger is the Swiss cheese and mushroom pattymelt.
Oh yeah... I cannot forget the grilled chicken sandwich that makes Carl's Jr.'s Santa Fe Chicken blush.

Ohhh yes.... I need to find good beer battered fish batter recipe.
To make home made breaded shrimp, I use McCormick's Tempura.
This thread makes me so hungry....That battered fish looks amazing.
Going to try that tartar sauce recipe!
