TLS suggested a recipe thread for some good edibles. I thought it would be nice to include everyone. Not just myself dominating.

So! In light of this I will start with my favorite homemade granola.

Granola
*******

4 c. old-fashioned or steel cut oats
1/4 tsp. kosher salt
Handful of coconut, 1/2 - 1 c.
1 c. sliced almonds
1/2. tsp. cinnamon

Heat in saucepan:

1/4 c. light olive oil
1/2 c. brown sugar
1/4 c. honey

Remove from heat and stir in 1 tsp. vanilla. Pour over oat blend and stir well. Spread on cookie sheet, preferably one with a lip, and pop into a 300?? oven for half hour. Stir every 10 minutes. Cool, crumble, store.

Play with it. You can stir into the cooled mix any dried fruit you like, seeds, etc. Play with the spice ratio, add wheat germ, anything goes. Super with almond milk or over Greek yogurt. 🙂

Fine fine. Ham. Must be a good old-fashioned bone in chuck of oinker with an actual fat cap and rind.

One- very large pot. Stock pot or similar. I use my enamelware canning pot with a scorch pad underneath.

Ham in pot. Pour to cover Coca-Cola or a good strong ginger soda like Vernor's. My Pisces bud uses Big Red. If you're a maraschino fan, go for it.

Simmer low and slow for 2 hours occasionally shifting ham if necessary. Remove to roasting pan. Trim off rind and any fat you don't care for. I leave it be, it's flavor and indulgence. Cross-hatch score the fat.
You can either stud the ham with whole clove or use ground clove like I do so no one gets a mouth numbing bud you may have missed.
Same with mustard. You can use ground mustard, slather Mr. Pig with whole grain or hot or even use ball park yellow.

Now, in a bowl mix brown sugar and dried goodies. Pack onto all exposed surface. Drizzle with molasses and lovingly slide that into a low oven, around 325.
Bake until sticky.

Want to know what's in your bread? Me too. That's why I make it. At 3-4 dollars per loaf for store bought it's silliness. Has all the texture and taste of wallpaper paste and about the same nutrients. I get extra course wheat flour at the organic shop for this.
Don't be intimidated by bread making. It's simple and soothing.

Wheat Bread
***********

1 c. milk, even powdered works fine for bread
1 1/2 tsp. salt
3 Tbsp. melted fat. Lard, butter, shortening, etc.
1 packet dry yeast or 1 cake fresh
1/4 c. warm water
1/3 c. molasses
1 egg
2 c. wheat flour
2 1/2 c. ( ish) unbleached white flour

In the 1/4 c. water whisk in your yeast. This is 'proofing'. Basically ensuring your little beasties are alive and happy. Unfortunately they are sacrificed in the baking process but they must belch and fart their way to glory or you will wind up with hardtack.
Leave for 5 minutes. It will appear frothy on top.

Grease one bowl, set aside with a nice clean cotton kitchen towel.

In additional bowl put warmed milk, molasses, salt and part of your flour with the yeast. The milk should be no warmer than 110??. You can test on the inside of your wrist and it should be comfortably warm. Any warmer you've Kruger'd your yeast.
Mix in egg and enough flour until you've a soft dough that comes away from the sides of your bowl.
Flour your prep area and knead dough, using as much flour as the dough can take so it loses it's tack.
You will feel when it is right. Soft, does not stick to the skin and feels like a nice bum.
Place your 'cheek' in greased bowl, flip up so top is oiled and cover with towel and set in a warm area to rise for 1 hr. or doubled in bulk.
Form into loaves. If no loaf pans make rounds and tada..peasant loaves.
Cover again for 2nd rise. 45 min.-1 hr.

Bake in a quick oven ( 400?? ) for 30 min., lower to 350 for 10 min.

This is a good one when you simply cannot be arsed to whip up something scratch to haul to a cook out or other. The spouse is bitchy, you are bitchy. It's too hot to bake. The dog won't stop licking his junk. Just because.

Easy Trifle
********

1 angel food cake, torn into small pieces

1 lg. box vanilla pudding made to packet instructions and folded in:

1 tub of whipped topping

Fresh fruit

Layer cake, layer pudding layer fruit. Keep going til all used. And ffs use the fine Wally Anchor-Hocking glass bowl.

Play with this one. Drizzle cake with espresso, then pudding, etc. Top with whip and chocolate shavings or toffee bits.
Use one fruit, use 10. Really nice with lemon pudding and blueberry too.

My faves and easy to make...

Mozzarella Stuffed Meatballs

2 tablespoons extra virgin olive oil
1 pound lean ground turkey or beef
1 large egg
1/2 cup finely chopped white onion
1/2 cup Panko bread crumbs
1/2 cup fresh grated parmesan cheese
1/4 cup milk
2 tablespoons minced garlic
1 tablespoon Worcestershire sauce
1 tablespoon yellow mustard
1 teaspoon hot sauce, like Tabasco
1/2 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper
1/4 teaspoon garlic salt
Fresh Mozzarella balls- I use Bocconcini, but you can substitute in string cheese.

Preheat oven to 35o degrees and grease 9??13-inch baking dish with oil.
Place turkey or beef, egg, onion, bread crumbs, Parmesan, milk, garlic, Worcestershire, mustard, hot sauce, salt, pepper and garlic salt into a large mixing bowl, stirring until just combined. Take 1/4 cup turkey/beef mixture and press into center with your thumb to make room for cheese ball. Place cheese in middle then with hands enclose the cheese with the beef, making sure the cheese is completely covered. Place meatballs into prepared baking dish and bake for 30 to 35 minutes, until cooked through.
I like to use this to make a meatball sandwich but you can also serve over pasta.


Overnight Baked French Toast
Ingredients:
1/2 cup of butter
1 cup of brown sugar
1 teaspoon of cinnamon
12 slices of thick bread- I prefer loaves of Hawaiian bread or challah bread or egg bread, not pre-sliced

Melt the butter in an 8 1/2 x 13-inch baking pan. Stir in the brown sugar and one teaspoon cinnamon. Layer the bread two slices deep in the pan.

Whisk the eggs, milk, and cinnamon together. Pour the mixture evenly over the bread. Sprinkle the 1/2 teaspoon cinnamon over the bread. Place the pan in the refrigerator and let sit for an hour or overnight. Great dish to simply pop in the oven when you wake up in the morning.

Preheat the oven to 350 degrees. Bake for 45 to 50 minutes or until the bread is browned. Serve hot with the syrup of your choice. (Buttermilk syrup is fantastic on this dish.) Top with caramel whipped cream or cinnamon whipped cream.

-Kale and Mushroom side dish

Ingredients:
4 Tbsp. extra-virgin olive oil, divided
2 small yellow onions, finely chopped
2 cloves garlic, finely chopped
1 1/2 tsp. dried oregano
1/2 tsp. red chili flakes
1 lb. sliced mushrooms
1 bunch kale, stems removed and chopped

Heat two tablespoons of the oil in a large skillet over medium-high heat. Add the onions and cook until softened and browned, about five minutes. Add the garlic, oregano and chili flakes, cooking an additional one to two minutes until fragrant. Add additional olive oil to coat the bottom of the pan. Bring to high heat. Add the mushrooms, and continue to cook until browned as well, adding additional olive oil as needed. Add generous amounts of kale (it wilts fast so don't worry about overflowing skillet) and cover with a lid, letting cook for a few additional minutes until all wilted. Sprinkle with salt and pepper to taste. Serve warm.



-Baked Sweet Potato Fries

1/2 tsp of paprika,1/2 tsp of onion powder, 1/2 tsp of black pepper, 1/2 tsp of garlic powder, 1 tbsp of olive oil, 1 lb of sweet potatoes or about 3 large sweet potatoes, and 1/4 tsp of sea salt.

To begin preheat your oven to 425 degrees, then in a bowl combine spices and the olive oil. Then take the sweet potatoes and scrub the outside with a bit of warm water. Peel and slice the potatoes into 1/2 inch slices or make the slices as thick or tiny as you prefer.

Take all of the sweet potato slices and toss them in the bowl of spices and olive oil for about 10 seconds or add slices and spices to a ziploc bag and toss until slices are coated. Take them out of the mixture and place them on a baking sheet. Bake them for 30-35 minutes and flip halfway through until the fries are golden brown. Take them out, sprinkle with sea salt, and serve them while warm.


-Yummy Salmon Steaks

1/3 cup of olive oil, 3 tbsp of reduced sodium soy sauce 2 tbsp of dijon mustard, 1/2 tsp of minced garlic, 2-4 salmon steaks

In a bowl, combine the oil, soy sauce, mustard and garlic. Pour half of marinade into a large resealable plastic bag. Add the salmon steaks; seal bag and turn to coat. Refrigerate for 1hr or overnight. Refrigerate remaining marinade.
Drain fish and discard marinade. Pan sear with medium heat each steak side for 2-5 mins (depending on thickness of steaks). Preheat oven to 375 degrees. Finished with pan searing each side, bake steaks in oven for 15 mins or until fish flakes easily with a fork. Drizzle with

Sorry luv, had to get errands and dinner out of the way. 🙂

Quick. I rely on my slow cooker a good deal. For everything from pulled pork, curries to apple butter and tapioca pudding.

I freeze leftovers, saving everything. A gallon bag houses all leftover veg for what I call 'soup stalactites'. It makes things faster to prep loads of onion, celery, bell peppers, etc. and freeze it.

Ideas for faster are things like chili and cheese stuffed potatoes, a hash of fried potato, onions and chorizo.
Homemade mac n' cheese, anything resembling a sandwich. Fried apple or fresh fruits over waffles, pancakes or French toast.
Pulled sauced pork for quick baked burritos. Tostadas of leftover chicken with avocados and fixings.
Taco salad or bake. Mexican lasagna of spicy meat, bean, cheese and tortillas baked and cut into wedges.
Dirty rice with hot sausage, peppers and onion. Chicken livers fried and tumbled with apple and onion over rice.
Chicken breast rolled in oat flour, parm, garlic salt and black pepper and baked.
Omelets. Spaghetti, slow cooked sauce and all that needs done is cooking pasta.
Tri color cooked noodles with ham or pepperoni..or both with cheese and a lot of crunchy fresh veg tossed with dressing. Tuna if you like it.
Hamburger or sausage gravy over biscuits. Quick meatloaves. Individual sized cooked in muffin tins for speed. Meat pies. Sloppy Joes.

Just a few for the hopper. 🙂

Oatmeal Bread

Into bowl place:

1 c. old fashioned oats
1/2 c. honey
2 Tbsp. butter
2 tsp. salt

Pour over this 2 c. boiling water. Let stand til warm. Sprinkle over this 1 packet dry yeast. Leave for 5 minutes. Stir in 3-4 c. flour, till dough pulls away.
Knead till smooth. Cover. Rise.
Punch down, form, cover and let rise again, about 45 minutes.
Bake @ 350?? for 30 minutes.

Tender crumb, sweeter. Good for dinner rolls, toast, etc.

Sugar Cream or Hoosier Pie

1 c. heavy ( whipping ) cream
3/4 c. milk
1/2 c. flour
1 1/3 c. sugar

Mix and pour into single unbaked pie shell. Dot with butter. If desired dust with cinnamon or nutmeg.
Bake @ 450 for 10 minutes, reduce to 350 for half hour.

Very sweet. Very rich. One small slice is plenty. I make lard crust. No apologies.

Curry ala Slow Cooker

In dry skillet toast 1 tsp. Garam Masala with 1 Tbsp. curry powder. Set aside.

4 Tbsp. olive oil slow cook and sweat down 4 large onions in same skillet.

All this in the cooker with 2 sliced peppers ( green, yellow, orange, red),
2 cloves garlic. A hot chili or chili flake if desired. And:

1 c. coconut
1 c. raisins, golden
2 lbs. cubed meat
2 large tins crushed or diced tomato
1 tin tomato sauce
1 large cubed sweet potato ( optional..I've also used leftover Halloween pumpkin cubed)

Lid and cook on low for 6 hours or so. Stir in one can coconut milk. Lid and cook an additional half hour.

Serve over rice.

Meatloaf

2 lbs. quality hamburger or ground venison

1 medium onion, diced
Good spoon plop of horseradish
4 shakes of Worcestershire
2 eggs
Oatmeal 1 1/2 c. or so
Healthy squeeze of ketchup
Garlic salt, 1/2 tsp. Pepper TT

Get your hands in there and get dirty. Shape into loaf and place in meatloaf pan, if you've got one. Top with more ketchup, smoothing over top. Loaf pan or cookie sheet if not. Bake @ 350 for an hour.

Forgotten Roast

1 beef roast
1 packet onion soup mix
1 can cream of mushroom soup

On heavy duty foil on baking sheet place roast. Top with dry soup, then cream soup. Top foil and seal well.

Bake at 250 all day or poke in low slow cooker. Makes its own gravy for mashed. Obviously the larger your roast the more soups you'll need. Found this in a church cookbook ages ago and it's been a staple whenever I can afford beef.

Lavender-Lemon-Blueberry Sugar Cookies

Pop 1 T. hand picked, 'food grade' or organic lavender blossoms in freezer bag with 1/2 c. sugar into freezer bag. Seal and roll with pin to crush blossoms. Set aside.

In mixing bowl combine 1 c. butter with 1 c. sugar. Cream well. Add 2 eggs, 1 t. each vanilla, lemon extract and 1 T. lemon zest. Stir into this 3 c. flour sifted with 1 t. each baking powder & baking soda. Fold in 1/2 c. of dried wild blueberries.

Let batter set and get happy. Make them drop style , baking at 375 for 6-8 minutes. Glaze or drizzle with confectioners icing.

Peach Pudding

2 cans peach halves, drained
* Place in baking pan, sprinkle with cinnamon.

Whisk 1 c. sugar, 1/3 c. butter with 2/3 c. milk alternated with 1 c. flour and 1 tsp. baking powder.
Pour over fruit and bake @ 350 for 1 hour.

Simple simple. Homely. Superb topped with ice cream or frozen yogurt. Favorite canned peach to use for this is raggedy from the south. Not as pretty but flavor is almost bang on for home canned peaches.
