How do win back my Taurus ex gf ( please help girls )

So my ex gf and I broke up last year , we were together for about 8 months and it got serious fast . I loved every second of it and we were like best friends , we broke up over a dumb argument and we've been in contact on and off . The last time we were in contact I stopped talking to her because I needed to make something of myself and be the best that I could be for her , we were in contact about 3 weeks ago and she said she's scared to trust me again and that I push her away . How can I make up with her , I'm aware that I have to start off slow and just as friends . She's super stubborn so it's difficult , I wanted to write her a letter saying everything and how I felt . I've known her for two years coming up in November and I love this girl . I say she means the world to me but she doesn't believe me so how can I show her .
I found anything remotely close to talking about emotions, feelings, or the situation would cause him to shut down and annoy him. I feel they're not good at expressing how they feel. (I have a Taurus father, a taurus girl friend and a taurus male friend and they're all the same in that way.) Have you tried just casually talking about how her day is going and what shes been up to?
Ignore her. She will be back. Go on with your life as if nothing happened. Try not to answer any calls or texts right away.

"They forgive, but never forget"... & that's the reason why I decided to break up with my Virgo boyfriend cause I couldn't trust him again, He Cheated on me once, so I became suspicious & jealous over little stuffs.. I always think he was lying to me & then I decided to just get over him cause I know I couldn't trust him again, cuz it's hard to be with someone that you can't trust even tho you love them.
