Convincing him shouldn't be necessary.
Religion is practiced, but spiritual faith comes from within.
A direct spritual relationship between God and yourself, nothing else.
Why should it be any of his business?
If your faith was strong, the minute he opened his 'yap'...immediately you would have shut it down.
Most Virgos are not pushy once an individual has taken a firm stance on something., something tells me you didn't.
His opinion of YOU matters (thus, a detrimental Cap trait).
This is why you're trying to convince him.
Do you think you're uneducated? Unintelligent?
If the answer is "No,"...then trying to convince him shouldn't matter.

Virgos are the best!
But oh, I hate when they fall into their own archetypical figures and still do not believe, but I like them.
Is not a bad thing if you believe in the things you believe or don't it is more how this factor is important in the relationship per se.

I'd be curious to know other aspects besides his Sun being in Virgi. I'm a Virgo Sun. I have Mercury in Virgo 3rd House and Mars in 12th. There's also lots of water aspects throughout as well. A natal chart or synastry may help put some pieces together.
