The thing is, you're already married with him. You have to focus on your long-term commitment rather than complain about these "worst" parts. There's a way to handle these things. The way I handle these is to reflect and ponder upon it deeply. Analyze the situations and try to understand things more. It's not that you have no choice but it's just that divorcing is just a bad choice...

when that happens you should talk about his interest, im positive he will open up. I know we leo men are guilty of this behavior, one minute we are extremely joyful and playful then the next we are lazy and bored. i suggest you try to talk to him about what he likes and challenge him a bit.
Firstly with the emotion thing I wouldn't worry to much about that yet. Firstly your guys are just in the beginning stage of getting to know each other so he probably just wants to keep it light and fun. Getting into emotional conversations with people that are yet to be in our inner circle is a rarity. Emotions are not logical and not easy to talk about, it can be so uncomfortable, especially if they're intense (for Taurus emotions are often felt very intensely). He probably still feels for his ex, we don't move on easily and it takes a lot of time before we truly bounce back. I'd give him time. The more you push him to open un emotionally the more he'll deny you.
As for him not texting you first that's also typical taurus behaviour... we like other to come to us, it makes us feel secure and trust you more. I do know with me if someone doesn't text me first it drives me nuts and if they can hold out longer then me (rarely they can) I will eventually cave and text them. So maybe take some space from him, if he contacts you your obviously on his mind, if he doesn't time for you to find a great guy who will give you what you deserve!!!

Cap with a Cancer moon here. No idea how I come across to others but I do feel like I sometimes have a much better intuition about other people's feelings than most people. So maybe it does make me more sensitive.

Geminis are super fun and if you just want to have a good time and play go for it. But when it comes to a relationship those guys are way to chaotic for us Taurus. It's not that they push people away, it's just that they have so many sides to them ans you'll never know what side your gonna get. They are a dual sign after all.
I've been with 2 geminis in my time and both where so moody, I couldn't keep up. They also would love me and sweep me off my feet, be man of the year, and amazing to be around then the next day they'd be sobbing, depressed, not knowing what they wanted in life, cold, distant, and just annoying.
It sounds like he is already pulling his many personality crap on you! So you just have to ask yourself if you like him enough to have a relationship that will have the same tune as your issue here!
