I really think it's just because our charts are compatible where it matters, but I just can't stop gushing and he hasn't stopped amazing me. I've never been involved with a Taurus guy before, but I'm kicking myself because I wish I had. I guess it wouldn't have mattered if it wasn't him. Taurus Sun, Leo Moon, Gemini Venus. He's involved and thoughtful. We talk all day, he's so logical and honest but fun. Most people would probably thinks he's boring but I can't get enough of him! I think I love him.

Them not being into me would be more than enough for me to "move on".
But that doesn't seem to be the case with the Taurus in question, unless you are still into him. I'm personally not big on closure but that's one way to go. If he's set on you I don't think that admitting to being crazy about him at one point will make things better, on the contrary, it could make him more hopeful. I'd go with ignore. Delete him from your life until he gets the picture. Unless you two are close friends, in that case it wouldn't hurt to try and talk it out for the sake of your friendship.
And to answer the title question, yes, I've found it extremely hard to move on once. I started thinking clearly once I physically got away from the guy for a longer period of time. I guess you could call it a case of out of sight, out of mind. That's when I've realized a few things. #1 realistically, there is far more than one person on Earth who fits my (or anyone else's) criteria. #2 I wasn't going to settle with one person anyway, I want to fall in love many more times and enjoy variety. #3 not everything has to be fatal love, there's nothing wrong with enjoying harmless crushes.
